Ingredients
(Serves 2–3 people)
For the Pasta:
- 250g spaghetti (or your choice of pasta)
- 1 tsp salt (for boiling water)
- 1 tbsp olive oil (optional, to prevent sticking)
For the Creamy Mushroom Sauce:
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 3–4 garlic cloves (minced)
- 1 medium onion (finely chopped)
- 200g fresh mushrooms (button, cremini, or a mix; sliced)
- 1 cup heavy cream (240ml)
- ½ cup whole milk (optional, for a lighter sauce)
- 50g grated Parmesan cheese (plus extra for serving)
- Salt (to taste)
- Freshly ground black pepper (to taste)
- ½ tsp dried thyme or Italian seasoning (optional)
- Fresh parsley (chopped, for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of water to a boil. Add 1 tsp salt to the water.
- Add the spaghetti and cook according to the package instructions (usually 8–10 minutes for al dente).
- Reserve ½ cup of the pasta water before draining the spaghetti. This will help adjust the sauce consistency later.
Step 2: Prepare the Mushroom Sauce
- Heat 2 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant (don’t let it burn).
- Add the chopped onion and cook until translucent (about 2–3 minutes).
- Stir in the sliced mushrooms. Cook for 5–7 minutes, stirring occasionally, until the mushrooms release their water and become golden brown.
Step 3: Add the Cream and Cheese
- Lower the heat to medium-low. Slowly pour in the heavy cream, stirring gently to combine.
- Add the Parmesan cheese and mix well until it melts into the sauce.
- If the sauce is too thick, add the reserved pasta water or milk, a little at a time, to reach your desired consistency.
- Season with salt, black pepper, and thyme or Italian seasoning. Let it simmer for 2–3 minutes, stirring occasionally.
Step 4: Combine Pasta and Sauce
- Add the cooked spaghetti to the skillet with the sauce. Toss gently to coat the pasta evenly with the creamy mushroom mixture.
- If the pasta looks too dry, add a splash of the reserved pasta water to loosen it up.
Step 5: Serve
- Plate the creamy mushroom pasta while it’s hot.
- Garnish with chopped parsley and extra Parmesan cheese.
- Serve immediately with garlic bread or a side salad.
