Ingredients

(Serves 2–3 people)

For the Pasta:

  • 250g spaghetti (or your choice of pasta)
  • 1 tsp salt (for boiling water)
  • 1 tbsp olive oil (optional, to prevent sticking)

For the Creamy Mushroom Sauce:

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3–4 garlic cloves (minced)
  • 1 medium onion (finely chopped)
  • 200g fresh mushrooms (button, cremini, or a mix; sliced)
  • 1 cup heavy cream (240ml)
  • ½ cup whole milk (optional, for a lighter sauce)
  • 50g grated Parmesan cheese (plus extra for serving)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • ½ tsp dried thyme or Italian seasoning (optional)
  • Fresh parsley (chopped, for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of water to a boil. Add 1 tsp salt to the water.
  2. Add the spaghetti and cook according to the package instructions (usually 8–10 minutes for al dente).
  3. Reserve ½ cup of the pasta water before draining the spaghetti. This will help adjust the sauce consistency later.

Step 2: Prepare the Mushroom Sauce

  1. Heat 2 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant (don’t let it burn).
  3. Add the chopped onion and cook until translucent (about 2–3 minutes).
  4. Stir in the sliced mushrooms. Cook for 5–7 minutes, stirring occasionally, until the mushrooms release their water and become golden brown.

Step 3: Add the Cream and Cheese

  1. Lower the heat to medium-low. Slowly pour in the heavy cream, stirring gently to combine.
  2. Add the Parmesan cheese and mix well until it melts into the sauce.
  3. If the sauce is too thick, add the reserved pasta water or milk, a little at a time, to reach your desired consistency.
  4. Season with salt, black pepper, and thyme or Italian seasoning. Let it simmer for 2–3 minutes, stirring occasionally.

Step 4: Combine Pasta and Sauce

  1. Add the cooked spaghetti to the skillet with the sauce. Toss gently to coat the pasta evenly with the creamy mushroom mixture.
  2. If the pasta looks too dry, add a splash of the reserved pasta water to loosen it up.

Step 5: Serve

  1. Plate the creamy mushroom pasta while it’s hot.
  2. Garnish with chopped parsley and extra Parmesan cheese.
  3. Serve immediately with garlic bread or a side salad.
